Posted by The Coach on May 25, 2011

Pumpkin & Macadamia Soup (omit the dollop of cream!)

2 tbs Olive Oil
1 cup Onions, chopped
3/4 cup Macadamia’s, roughly chopped
2 tsp minced Ginger
2 tsp minced Garlic
1 tsp ground Turmeric
1 cup Granny Smith Apple, peeled, cored & diced
1kg Butternut Pumpkin, peeled & diced
1 cup Chicken Stock

Heat the oil in a large pan. Add the onion. macadamia’s, ginger and garlic, and saute’ until lighlty browned. Add the turmeric and stir. Add the apple and pumpkin. Stir for 2-3 minutes and then add the chicken stock. Cover and cook for 20 minutes or until the pumpkin is quite soft. Pour all the ingredients into a food processor and blend until smooth and creamy (be careful here that the steam doesn’t blow the top off your processor or blender!) Serve and enjoy. Feeds
