    • Slow Roasted Pork Shoulder February 21, 2017
I keep meaning to get back to regular posting, but 4-month old babies keep you surprisingly busy. ;) There's not much time for cooking, much less writing blog posts! Luckily this pork shoulder has minimal hands-on time and will feed a small army. You prep it the night before you want to eat and just stick it in the oven the next morning.

Paleo Cookies

Posted by The Coach on May 25, 2011

Paleo Cookies

Adapted from Steve Parsoneault from Paleo-Zone

4 cups Almond Meal
2 cups Ground Walnuts
2 cups Heated Raw Organic Honey (mixes easier that way)
1 cup Chopped Dry Fruit (cranberries/raisins – I’ve also used raw berries)
1 teaspoon cinnamon

Mix the dry stuff first, then add the honey. I like to refrigerate it at this point for about an hour so that it’s easier to roll balls but it’s not critical. Space them out quite a bit on baking paper – these cookies do kinda go flat. Bake at 15-20 minutes at 180. Really start checking after 15 minutes – cook them too much and you’ve got dog treats.
